Ingredients (serves 4)
* 1 quantity bruschetta ingredients (see related recipe)
* 2 tablespoons olive oil
* 200g button mushrooms, sliced
* 1 lemon, rind finely grated, juiced
* 1/4 cup flat-leaf parsley leaves, chopped
* 2/3 cup creme fraiche
Method
1. Follow steps 1 to 3 for making bruschetta (see related recipe).
2. Heat oil in a large non-stick frying pan over high heat. Add mushroom. Cook, stirring often, for 5 minutes or until light golden and juice has evaporated. Pour over 2 tablespoons lemon juice and stir to combine. Remove from heat. Add half the parsley and season with salt and pepper. Set aside for 5 minutes to cool.
3. Meanwhile, combine creme fraiche, lemon rind and remaining parsley in a bowl. Spread over warm bruschetta. Top with mushroom mixture. Season with pepper and serve.
